Chickpea Cous Cous
Serves 4
1 onion, chopped
Fry Light
2 peppers (any colour)
1 can chopped tomatoes
1 can chickpeas
Cous cous
1 Fry onion and pepper with Fry Light until soft.
2 Add chopped tomatoes and chickpeas and simmer for 10 minutes.
3 Prepare the cous cous.
4 To serve, transfer cous cous to plate and pour over tomato mixture.
